Rustic Blueberry Baked Oatmeal:

Oatmeal has always been a comfort food. Whenever I eat it I am reminded of the early mornings when my mom would wake me up and make me a bowl of oatmeal before dropping me off at daycare. The taste of brown sugar or maple syrup on my oatmeal makes me think of eating oatmeal at restaurants and my mom and I just being in heaven. Now I try to make my oatmeal a little more healthier and only add in a tiny amount of brown sugar or maple syrup (everything is good in moderation, right?). So when I found my old ramekin (a single serving bowl that can be baked in the oven) I knew I had to try baking my oatmeal because normally I have only boiled it.


The result of baking my oatmeal turned out to be delicious. All the flavours added into the recipe made it the most delicious and healthy breakfast I have had in awhile (I've been eating a lot of toast lately). The only way I can describe the taste is by comparing it to dipping an already very soft oatmeal cookie into a cup of milk and then eating it. This recipe is definitely being added to my morning go-to. If you want you can make this ahead of time and then bake it when you are ready.
